I am attaching two bibliographies to this response, one on glass made in the Netherlands, and one "glass in art", which includes information on some of the Dutch paintings which include glass. Our library participates in interlibrary loan for many of our books; your library can borrow materials for you.
Your specific questions, the symbolic role of glass in the paintings, and glasshouse production in the 17th century, are not easy to answer. I would think that the symbolic role is one for you to interpret, based on individual paintings. There will be no specific data/statistics for glasshouse production at that time, but reading books about the making of glass will help you to understand which firms were involved in manufacture, and where the glass was made.
